Course Overview

The Barista Skills Training and Mixology Course is designed to provide participants with essential skills and knowledge to prepare, present, and manage food and beverage outlets. The course is ideal for candidates aspiring to be professional bartenders and barista experts.

Justification

Barista and mixology are rapidly evolving fields within the food service industry, often positioned at the most visible and engaging areas in a hospitality setup. These professions combine art, glamour, and innovation. Mixologists and baristas are at the forefront of inventing new service techniques and beverages. A well-trained bartender can educate clients about cocktail ingredients, their origins, and significance, adding flair to the profession.

Course Purpose

The purpose of the Barista and Mixology course is to train hospitality professionals in the practical skills needed to efficiently run a coffee bar and cocktail house. This includes the use of espresso machines, smoothie and frappe blenders, and various modern tools for cocktail preparation.

Teaching Model

The course uses a practical-based learning approach. Learners will engage in hands-on preparation of both alcoholic and non-alcoholic drinks, working on real projects to apply concepts and techniques acquired during training.

Mode of Delivery

The course is delivered physically at the coffee bar within the kitchen training facility. Supplementary learning materials and audiovisual content will be shared via the University Learning Management System.

Expected Learning Outcomes

  • Demonstrate basic skills in operating espresso machines to produce perfect espresso.
  • Examine the components of a cocktail, barista, and mixology.
  • Apply safety and hygiene rules in cocktail preparation.
  • Formulate unique barista and alcohol menus.

  • Introduction to coffee and tea: coffee bean types, storage, fundamentals
  • Coffee processing: cupping, brewing methods, filter brewing
  • Espresso process: extraction techniques, grind, dose, tamp
  • Alternatives: drinking chocolates, lemonades, specialty tea, concoctions
  • Milkshakes and ice-creams: flavours, alcoholic milkshakes, mocktails, gelato, sorbet, vegan options
  • Garnishing and presentation techniques
  • Mixology techniques: muddling, shaking, stirring, layering, garnishing
  • Non-alcoholic mixology
  • Cocktail service: measurement and pouring techniques
